OUR HISTORY

Coffee is a product that goes beyond itself, it is made up of infinite details and stories. Those of the people who work it and those of the people who taste it. And then there is ours, which we try to tell you here.

For us, coffee is much more than a product to be made on the best of our possibilities: it represents our history, that is intertwined with that of Italy. 1948 is the year in which Giovanni Serrani set up his activity in the food sector, and it is also the year of the new beginning of our country, the rebirth after the Second World War years.
Giovanni’s hopes and courage were the same as those of many other Italians who strongly wanted to start again.

That courage has joined Giovanni’s passion for coffee that he considered a moment of joy and conviviality. As a consumer, he chose to become a roaster and to create the perfect coffee, the one he always wanted to taste.
Our story began from this idea, which has continued during the years in the attempt to respect and realise Giovanni’s dream.

OUR HISTORY

For generations we personally select the best coffee origins that we import and work according to traditional methods in order to preserve their high quality.

It was 1948 when Giovanni Serrani set up in Todi an emporium where his first-born son, Carlo, matured his true calling for espresso.  Shortly thereafter, Carlo and his brother Alfio, inaugurated the first coffee roasting facility. This is the beginning of the constant pursuit of study and searching  of our special blends for giving the best quality Serrani coffee espresso.

the rules for a good coffee

Serrani Espresso is True Italian Espresso, the result of the right blend from various coffee origins.
Only this way can one get a drink from the aromatic richness with an intense and well-balanced  flavor.

Good Espresso

The perfect balance for a true Italian Espresso: 7 grams of great mixture in a cup of 25 milliliters of coffee extracted from a professional espresso machine for about 25 seconds.

Bad Espresso

Pay attention to the amount of time it takes to extract the coffee. If the flow extracted is weak or even drips out, the coffee will be over-extracted. If, on the other hand, the flow tends to come out excessively thick and fills the cup too quickly, the coffee will be under-extracted.

The look of espresso

True Italian espresso comes with a creamy light brown tending to dark brown with tawny hues and with a very fine texture with no bubbles and dark spots.

 

The scent of Espresso

On the nose the true Espresso presents a wide variety of notes, depending on the composition of the mixture so that we could summarize: intense fragrance that highlights various floral and fruity notes, aromas of chocolate, spice and toast

The taste of Espresso

Espresso must be pleasing to the palate, consistent and velvety with no astringent notes. It should be a perfect balance between bitterness and acidity and have a chocolaty aftertaste that persists for several minutes after drinking it.

Serve Espresso

The original container created to enhance the sensory characteristics of an espresso is a small, white, cone-shaped ceramic cup—heated but not scalding—of the right thickness to compliment the lips while tasting.
